Gingerbread Blondies

If you want the power packed flavors of Fall and Winter, these will fill the bill! These Gingerbread Blondies are packed with molasses, cinnamon, ginger, cloves and nutmeg. They are the best snack or dessert you can serve anytime. Super moist and super flavorful.

These are also super easy to make!

How to make the delicious blondies:

Beat brown sugar, butter and molasses.

Add eggs and beat.

Add vanilla and beat.

Sift flour, cinnamon, ginger, salt, baking powder, clove and nutmeg together in a separate bowl.

Add to egg mixture and fold in by hand.

Transfer to greased pan and bake.

Let cool and sprinkle with confectioners sugar.



This is one recipe you can reply on for a quick dessert or snack. Perfect for lunchboxes, after supper or an afternoon snack with tea.

Ingredients

1 cup packed light brown sugar
1/2 cup (1 stick) unsalted butter, melted, slightly cooled
1/4 cup molasses
2 large eggs
1 tsp. pure vanilla extract
1 cup all purpose flour
1 tsp. ground cinnamon
1 tsp. ground ginger
3/4 tsp. kosher salt
1/2 tsp. baking powder
1/4 tsp. ground cloves
1/4 tsp. ground nutmeg
2 Tbsp. confectioner’s sugar


Instructions

Preheat oven to 350 degrees F.

Grease an 8″ x 8″ pan with cooking spray. 

In a large bowl, whisk brown sugar, butter and molasses.

Add eggs and whisk until light and foamy, about 4 minutes.

Whisk in vanilla.

Sift flour, cinnamon, ginger, salt, baking powder, cloves and nutmeg over egg mixture and fold to combine.

Transfer batter to prepared pan.

Bake blondies just until set, 20-25 minutes.

Let cool.

Dust with confectioners sugar before slicing.

I took a shortcut to this recipe and used my hand mixer.
