I love Biscotti. But…I don’t love how hard the cookie is. I’m just not a fan of dunking cookies into my coffee…. Then I noticed this great Spice Biscotti recipe that doesn’t twice bake them. Perfect!
The recipe has all the great spice seasoning you’d expect. The recipe called for almonds, but I substituted walnuts since I didn’t have any. I also added some raisins…thought that would be a great addition.
These are perfect on a cold Winter’s day with a cup of steaming cocoa or hot coffee or tea. Don’t you just love the LL Bean mug I just got on my last trip there?
They came out awesome, except the bottoms got a little too browned. But they were still delicious.
How easy are these to make?
You mix the first 7 ingredients and then gradually add the flour and baking powder. Mix together and place on a floured surface. Divide into thirds and shape into 6 inch by 4 inch loafs.
Place on the baking sheet and bake at 350 degrees F for 25 minutes.
Cook and cut into diagonal slices.
These cookies are REALLY GOOD…I mean really good. Perfect for curling up with cocoa, coffee or tea, watching a great movie or reading a good book!
They are also perfect for gift giving!
Soft Spice Biscotti
- Total Time: 35 minutes
- Yield: 2 dozen 1x
Description
Delicious soft spice biscotti with nuts and raisins. Softer than the traditional biscotti. The perfect Italian cookie.
Ingredients
1 cup granulated sugar
1 cup brown sugar
1/2 cup chopped almonds or walnuts
1/2 cup raisins
1/3 cup oil
2 tsp. cinnamon
1 tsp. ground cloves
2 tsp. water
3 large eggs
2-1/2 cups all purpose flour
2 tsp. baking powder
Instructions
Preheat oven to 350 degrees F.
Combine first 9 ingredients.
Beat with a hand or stand mixer at low speed approx. 1 minute.
Combine flour and baking powder. Gradually add flour mixture to mixture in bowl, beating until blended.
Turn dough out onto a lightly floured surface, shape into three 6″ x 4″ rectangles.
Place rectangles onto baking sheet coated with cooking spray or a parchment sheet. Flatten to 3/4′ thickness.
Bake at 350 degrees F for 25 minutes.
Remove and cool for 10 minutes. Cut diagonally into 3/4 inch slices.
Notes
Original recipe called for a baking temperature of 375 degrees F. I thought they came out too browned on the bottom, so I would suggest baking at 350 degrees F.
If you would like the traditional biscotti, after slicing put back in the oven and bake at 350 degrees F for 10 minutes. Flip cookies over and cook for another 10 minutes.
