November 18, 2010. This is my first post of my recipe blog, and fittingly it is a recipe that has been in my family for years!
When we were in school, my brother was able to get this High School Peanut Butter Cookie recipe from one of the ladies that worked in the kitchen. These cookies are just what a peanut butter cookie should be…crunchy on the outside and chewy on the inside. Delicious with a glass of milk. It takes me back to my school days!
Peanut Butter CookiesIngredients:
3/4 c. shortening
1 c. smooth peanut butter
1 c. brown sugar
1 c. white sugar
1 tsp. baking soda
1/2 tsp. baking powder
2 c. all-purpose flour
1/4 tsp. salt
2 tsp. vanilla
Heat oven to 350 degrees F. With an electric mixer, mix shortening and peanut butter until blended. Add brown and white and mix until blended. Add eggs and mix until incorporated in. Add dry ingredients and vanilla. Mix thoroughly. Drop by tablespoonfuls, (or I use a small ice cream scoop) on un-greased cookie sheet. Bake at 350 for 12-15 minutes, or until slightly browned on the edges. Yield 36 cookies using medium ice cream scoop (4″ cookies), more if making cookies smaller.
Even though the original recipe states to cook for 12-15 minutes, I have experienced they need more like 17 minutes to cook.
