Ingredients
3/4 c. shortening
1 c. smooth peanut butter
1 c. brown sugar
1 c. white sugar
2 eggs
1 tsp. baking soda
1/2 tsp. baking powder
2 c. all-purpose flour
1/4 tsp. salt
2 tsp. vanilla
Instructions
Heat oven to 350 degrees F.
With an electric mixer, mix shortening and peanut butter until blended.
Add brown and white and mix until blended.
Add eggs and mix until incorporated in.
Add dry ingredients and vanilla.
Mix thoroughly.
Drop by tablespoonfuls, (or I use a small ice cream scoop) on un-greased cookie sheet. Bake at 350 for 12-15 minutes, or until slightly browned on the edges.
Yield 36 cookies using medium ice cream scoop (4″ cookies), more if making cookies smaller.
Notes
You get about 36 cookies that are about 4″ in size.
