I just got some beautiful peaches at Costco, and although I love to just enjoy eating them, I decided to try making a peach crisp. Since I was the only one probably eating them I made just one in a mini cast iron skillet.
Since the grille was already heated from making the steaks, I put in the grille to bake on the top shelf.
They took no time, and were bubbly and delicious.
This crisp has no oatmeal in the topping but I imagine you can add a little if you like that extra crunch.
How to make Peach Crisp:
Peel and slice the peaches. Remove pit.
Place peaches in a bowl and add the sugar, cinnamon and cornstarch. Mix together well.Â
Add peaches to cast iron mini skillet sprayed with cooking spray.
In the same bowl, mix together the flour, dark brown sugar, granulated sugar and cinnamon.Â
Add melted butter and mix with a fork. It is OK if the mixture is a little sandy.
Place topping on top of the peaches.
Bake for 30 minutes or so, or until tops are slightly browned and fruit is bubbling.
Cool about 10-15 minutes before serving.
The result is a perfect ending to a delicious meal! Who doesn’t love Peach Crisp a la Mode?
You can use this same recipe and replace with other fruit in season like blueberries, apples, plums, raspberries or strawberries!

Delicious ending to a Summer meal.
Ingredients
Peach Mixture:
2 large peaches (about 1 cup)
1/4 cup granulated sugar
1 Tbsp cornstarch
Pinch cinnamon
Topping:
2 Tbsp melted butter
6 Tbsp flour (or you could use 3 Tbsp flour and 3 Tbsp oatmeal)
2 Tbsp dark brown sugar
1-1/2 Tbsp granulated sugar
1/8 tsp cinnamon
Instructions
Preheat oven or grille to 350 degrees.
Spray ramekin or mini cast iron skillet with cooking spray.
Mix peaches with sugar, cornstarch and pinch of cinnamon.
Spoon fruit into ramekin or skillet.
Mix together the flour, dark brown sugar, granulated sugar and cinnamon.
Add melted butter and mix together.
Spoon topping over peaches.
Place on baking sheet or heavy duty foil and bake for 30 minutes or so, or until top is slightly browned and fruit is bubbling.
Cool for about 10 to 15 minutes before serving.
