Mini Peach Crisp

Delicious ending to a Summer meal.


Ingredients

Scale

Peach Mixture:

2 large peaches (about 1 cup)
1/4 cup granulated sugar
1 Tbsp cornstarch
Pinch cinnamon

Topping:

2 Tbsp melted butter
6 Tbsp flour (or you could use 3 Tbsp flour and 3 Tbsp oatmeal)
2 Tbsp dark brown sugar
1-1/2 Tbsp granulated sugar
1/8 tsp cinnamon


Instructions

Preheat oven or grille to 350 degrees.

Spray ramekin or mini cast iron skillet with cooking spray.

Mix peaches with sugar, cornstarch and pinch of cinnamon.

Spoon fruit into ramekin or skillet.

Mix together the flour, dark brown sugar, granulated sugar and cinnamon.

Add melted butter and mix together.

Spoon topping over peaches.

Place on baking sheet or heavy duty foil and bake for 30 minutes or so, or until top is slightly browned and fruit is bubbling.

Cool for about 10 to 15 minutes before serving.
