I decided at the last minute to throw together a salad for Christmas dinner as some of my guests did not like the French Onion Soup I was planning on having. I thought oh God, I didn’t plan on having salad, hopefully I have something to throw together.
So I had about 3/4 of a head of Iceberg lettuce and a half a container of leafy lettuce…
I had a red pepper to dice up…
I had a can of Dole mandarin oranges…
I had a package of shelled pistachios…
I had some dried cranberries…
I had some Vermont Cheddar Cheese slices I use for hamburgers, but they would be perfect for stamping out some cute shapes to decorate the salad…
Viola….I had a Christmas Salad!
It was super easy, super delicious, and super decorative! And those that didn’t care for French Onion Soup had a great start to our Christmas Dinner!
It’s super easy to assemble:
I took an oval platter and put a round bowl in the middle for dressing.
I spread the lettuce’s all around the platter.
Added the rest of the ingredients on top to make it look festive.
Then I made the Champagne Citrus Vinaigrette I found on twohealthykitchens.com site. It is one of the best vinaigrette’s I have found! I am obsessed!
