I fell in love with this side dish from the Red Fox Bar and Grille when visiting the No Conway/Jackson NH area. If you love carrots and love turnip, you will love this side dish!
This great restaurant is located right across the street from the Nestlenook Inn in Jackson. That’s a great spot for ice skating and sleigh rides in the Fall and Winter and also great for visiting during the Summer.
Jackson is not only great for inns and sleigh rides, it has cross country skiing in the Winter and Attitach downhill skiing is very close by. And don’t forget the outlets!
At the Red Fox, I have had the haddock, clam chowder, French onion soup, stir fry, pork chop and of coarse the mashed carrot and turnip. All were super good and super fresh. They have a wood fired oven which they cook many item’s…pizza, chicken wings, you name it. They were very accommodating when we arrived with 10 people and no reservation. Many other restaurants in the area say they have nothing or make you wait an hour or so for tables to open up. But at the Red Fox they already have tables for a crowd so you are seated fairly quickly.
I would give the Red Fox 5 stars!
Anyway, back to this great carrot and turnip mashed.
These mashed are really easy to make………..
I bought the diced turnip so no need to deal with peeling and cubing the turnip.
Just peel the carrots cut into chucks. Cook the turnip and carrots in separate pans. When cooked, drain. Let them sit a little to get all of the water out of them. Then mash all together. Add butter and salt and pepper. Or, you can even add some brown sugar or Maple syrup.
That’s it! When you are looking for a different side dish, try this.
Carrot and Turnip Mash
Ingredients
2 lb. carrots, peeled and cut into chunks
2 lb. turnip, peeled and cut into chunks
4 Tbsp butter
Salt and Pepper
Handful (or less) Brown Sugar (optional)
2 Tbsp Maple Syrup (optional)
Instructions
In separate pans, cook turnip and carrots in boiling salted water for about 20 minutes or until done.
Mash separately and put in a strained to let some of the water out of the vegetables.
Add butter, salt and pepper to taste, and if desired, maple syrup and/or brown sugar.
