I found this great recipe on Spruce Eats and decided to try it on the Blueberry Lemon Loaf Cake I just made (that was incredible by the way).
I wanted the icing to stand out over the sweetness of the cake. IT DID! The icing is just a thin layer on the cake so it’s just the right ration to wake up your taste buds!

I have tried a lot of recipes for lemon icing, but a lot of them are just confectioners sugar and lemon juice. To me the icing has no depth. This recipe has lemon juice, lemon zest as well as milk. You can leave white or add a drop of yellow food coloring to make it yellow.Â
You can make this as thin or thick as you want by adding a little more confectioners sugar or milk.

Super Tart Lemon Icing
Description
Perfect balance for a tart lemon icing.
Ingredients
1 cup confectioners (or powdered) sugar
1 Tbsp fresh lemon juice
2 tsp. lemon zest
1 Tbsp milk
Drop yellow food coloring
Instructions
Whisk all ingredients together to desired consistency.
Add more confectioners sugar to make thicker, or more milk to thin.
