I found this recipe in a magazine recently and thought it was a great variation on Cole Slaw. I used the mandolin to slice the peppers very thinly. I also changed the ingredients for the marinade a little from the original recipe, and it turned out great.
Bell Pepper Slaw
1- (10 oz. bag) Angel Hair Slaw Mix
1 large green bell pepper, seeded and thinly sliced
1 large red bell pepper, seeded and thinly sliced
1 large orange bell pepper, seeded and thinly sliced
1 large yellow bell pepper, seeded and thinly sliced
1 large purple bell pepper, seeded and thinly sliced
1 c. grape tomatoes, cut in half
1/4 c. red wine vinegar
1/4 c. canola oil
1/2 tsp minced garlic
1 Tbsp chopped parsley
salt & pepper
In a large bowl, place slaw mix, peppers and tomatoes. Mix well.
In a small bowl, combine oil, vinegar, garlic, parsley and salt & pepper. Whisk well. Pour over slaw mixture. Close lid and shake well. Store in refrigerator.
