Baking Mix Blueberry Muffins

Ok, sometimes you feel like home made Blueberry Muffins, but don’t feel like dragging out all those ingredients for a made from scratch Blueberry Muffin. Hence, the great Baking Mix Blueberry Muffins!

It’s Memorial Day, and I know we should be taking a day off from our usual routine, but it is such a beautiful morning I felt like Blueberry Muffins on the porch.

I made these for years, as they are quick and easy. They’re just not as good the next day. I never had that worry because most of them were gone anyway.

I used to use Bisquick Baking Mix, but recently changed to Jiffy Baking Mix as I think they changed the Bisquick. The muffins just don’t come out as well as they used to. Either mix you use, they certainly will be delicious.

ANYONE can make these muffins! The only thing you need is Baking Mix, sugar, milk, oil and an egg. And most naturally… blueberries. However you can also use anything else you would like to make muffins out of.

Sometimes I use Wild Maine Blueberries, but this time I used the big blueberries I bought from Costco. I will say they sure were tart! There’s no mistaking they were blueberries!

So now you can have homemade Blueberry Muffins in half the time…and mess!

Baking Mix Blueberry Muffins

Quick, easy, delicious.


Ingredients

Units Scale
  • 2 cups Baking Mix
  • 2/3 cup milk
  • 1/3 cup granulated sugar
  • 2 Tbsp. Canola oil
  • 1 egg
  • 11/2 cups blueberries

Instructions

Lightly mix all ingredients except blueberries. Leave some lumps.

Add blueberries and fold in.

Scoop evenly into cupcake pan lines with cupcake papers.

Bake in a preheated 400 degree F oven, and bake for 20 minutes. Rotate pan halfway through baking.

    I just made this today, so easy!! I added a dab of vanilla and cinnamon, yummy!!!

      These muffins are the “go to” muffins for weekends! I’ve been making these so long I know the recipe by heart!

    I’m excited to see how they turn out. I saw the pictures and how big and fluffy and tall they are and got excited about them.

    I made a batch of blueberry and a batch with chocolate chips for my blueberry -allergic husband. And since I only have 1 muffin tin, I put half of each batch in little mini loaf pans… So we’ll see how it turns out that way too!

      I have a lot of Blueberry Muffin recipes, but this is the recipe my Mom used to make, and they are so easy. Enjoy.

    Your blog is so easy to navigate and I enjoy reading your thoughts about your recipes. The recipes are clear and easy to glance at. There is just something homey, relaxed, and inviting about the way you’ve set this up. I have a reduced carbohydrate knockoff of Bisquick and I wanted to use that to make muffins. This looks great. I’m looking forward to having blueberry muffins on a Saturday morning. It’s winter and I want something that reminds me of summer. Wild blueberries are the ticket.

      Totally agree! It snowed last night so blueberries are just what I need. I’m making mini quiche right now, but I’m making them right after!

    I almost scrolled by this great quickie muffin recipe because it didn’t have any reviews, but…everyone loved its simplicity! So people, don’t forget to give it some stars! Why do we need such a simple shortcut?
    Because I have not found a biscuit mix that puts the proportions for muffins! Waffles, biscuits, sugar cookie, apple crisp, yes, but no muffins….so thank you!
