Garden Salad with Grilled Chicken Breast

When you just want to get a quick meal on the table this Garden Salad with Grilled Chicken Breast is your go to.Simple garden salad paired with a home made Italian dressing and marinated boneless chicken breast grilled and sliced. There is nothing like the taste of juicy grilled chicken marinated in delicious Italian dressing. 



Top the grilled chicken on your favorite salad and dressing and you’ve got a quick meal. 



I always use Bell and Evans chicken. It always comes out juicy and tender to top your salad. It comes in handy Cryovac containers that are easy to throw in the freezer and thaw out without a mess everywhere. 



I also always make Good Seasons Salad Dressing made with various vinegar’s. It beats any prepared dressing I have found and is super quick to make. You can use any vinegar you like; Red Wine vinegar, Blush Raspberry wine vinegar, Champagne vinegar, white Balsamic vinegar, dark Balsamic vinegar…you name it.

Ingredients


Instructions

Place diced shallot in a small bowl and cover with lemon juice. Set aside for 5 minutes.

In another small bowl, combine the olive oil, champagne vinegar, salt and pepper. After the shallots have pickled slightly in the lemon juice, add (including pickling liquid) to olive oil and vinegar.

Whisk to emulsify. Season to taste.

Quick healthy meal. 


Ingredients

Scale

3 cups lettuce of your choice
1 regular tomato or 2 Campari tomatoes, sliced
half of a cucumber, halved and sliced
jarred roasted red peppers, sliced
black olives
2 celery heart stalks, sliced
Chicken breast half, grilled and sliced


Instructions

Marinate chicken breast in Italian dressing for about 15 minutes 1/2 hour.  

Heat grille.

Cook chicken breast until inside temperature is 130 degrees F. Remove to a plate and cover with aluminum foil to rest while you prepare the salad. 

Prepare the salad and top with sliced chicken breast. 

Top with Good Seasons Italian or your favorite dressing.
