Easy Lemon Pasta

I saw this easy Lemon Pasta on Jaime Oliver’s Food Tube. I admit I was very skeptical that something so easy could actually be good, but I decided to try it. Was I wrong…

I always have lemons, basil growing in my Aero Garden, a block of Parmesan cheese and pasta.


I decided to use Pastene’s nested fettuccine. It takes 9 minutes to cook.

While the pasta is cooking, grate the rind of one lemon in your serving dish or bowl. Squeeze the juice of half a lemon in with the zest. Season with a little salt and freshly ground pepper. Add some cold pressed extra virgin olive oil (about double the lemon juice). Add 1/3 cup or so of freshly grated Parmesan cheese. Mix together.



When pasta is done, use tongs to put the pasta in your plate or bowl. Don’t worry about draining, its OK to let some of the pasta water to go into the sauce.  

I do have to say, this pasta is super easy and super delicious! It take 9 minutes to make. 

You can also add some asparagus to the pasta water to cook to add some veggies.

Easy Lemon Pasta

Super delicious, and super easy. No cook sauce.


Ingredients

Scale

1/4 pound pasta, cooked
Zest of 1 lemon
Juice of a half a lemon
Salt and freshly ground black pepper
Cold pressed extra virgin olive oil (double the lemon juice)
1/3 cup or so freshly grated Parmesan cheese, plus extra for topping
4 leaves or so fresh Basil


Instructions

Notes

I added a little more than half a lemon juice and found that it was a little too sour for me. So I added a tiny bit of agave to sweeten.
