Finally peaches are in season! I have a ton of recipes just waiting for the peaches especially these Peach Streusel Muffins!
The other day I made Peach Crisp and today I thought I would make these delicious sounding Peach Streusel Muffins I just saw in my Taste of the South magazine.
These muffins are unbelievable delicious! Probably the best I’ve have ever had! Super easy to make, and ingredients you already have.
Just add some super juicy peaches, streusel topping and you have a delicious muffin to enjoy!
All you do is:
Add dry ingredients together.
Add wet ingredients together.
Cream butter and sugar with mixer. Add egg.
Then add dry and wet ingredients alternatively until combined.
Scoop into paper lined or greased muffin cups.
Top with more peaches and streusel and bake.
Light, buttery, delicious. These are the best muffins ever!
Peach Streusel Muffins
Description
Buttery with a hint of peach. Perfect muffins for anytime!
Ingredients
Batter:
1-1/2 cups all purpose flour
2 tsp baking powder
1 tsp kosher salt
1/4 tsp baking soda
1/3 cup whoile milk, room temperature
1/3 cup sour cream, room temperature
1-1/2 tsp vanilla
1 cup[ granulated sugar
1/2 cup unsalted butter, room temperature
1 large egg, room temperature
3/4 cup chopped fresh peaches
1 Tbsp all purpose flour
Top with:
1/4 cup chopped fresh peaches
Streusel Topping:
1/4 cup all purpose flour
3 Tbsp granulated sugar
1/2 tsp cinnamon
1/4 tsp kosher salt
1/4 cold unsalted butter , grated or cubed
Instructions
Preheat oven to 350 degrees F. Line a 12 cup muffin pan with paper liners or spray with baking spray.
Batter:
In a medium bowl, whisk together 1-1/2 cups flour, baking powder, salt and baking soda. In a small bowl, whisk together 1/3 cup milk, sour cream and 1-1/2 tsp vanilla.
In the bowl of a stand mixer, beat granulated sugar, and butter on medium high speed until light and fluffy, 3-4 minutes. Add egg beating until combined, stopping to scrape down sides of the bowl. With the mixer on low speed, add flour mixture alternatively with the milk mixture, beginning and ending with the flour. Beat well between each addition and stop as needed to scrape down bowl.
In a medium bowl add the 3/4 cup peaches and 1 Tbsp flour. Toss to coat the peaches. Add peaches to muffin batter and gently fold until just combines.
Divide batter between muffin cups. Top with 1/4 cup[ peaches and streusel topping.
Bake until a wooden pick inserted into the centers comes out clean, about 20 to 25 minutes. Let cool in pan for at least 10 minutes, then transfer to rack to cool.
