I was looking for a dessert to bake and take and was in the mood for something Banana. The first thing that came to mind is good ole Banana bread. Delicious but uninspiring. Then I thought of Banana cupcakes. Yes, Banana Cupcakes with Cream Cheese Frosting. I started searching the internet and found a recipe. Made it and the cupcakes didn’t come out so well. They were flat and look like some of the bananas exploded. So I searched again and found this great recipe. Finally, a winner!
This great recipe from Spend with Pennies was a winner! I like cupcakes that are light and fluffy. Almost like a cake mix. If I wanted a dense muffin I would make muffins. No, a light banana cupcake with creamy cream cheese frosting was exactly what I was craving.
This recipe is delicious. I didn’t add walnuts to the batter, but I can imagine you could easily.
You can make your own buttermilk as the recipe suggests but I like to make from purchased buttermilk if at all possible. It’s always nice though to have the option of making your own if you don’t want to run to the store.
In this recipe you beat the egg whites to stiff peaks and add into the mixture at the end.
The results are a perfectly light banana cupcake topped with delicious cream cheese frosting.
Banana Cupcakes
Description
These cupcakes are moist and flavorful and very light.
Ingredients
Cupcakes:
¾ teaspoon lemon juice
¼ cup milk (just shy of ¼ cup)
2 eggs separated
½ cup butter
1 cup sugar
2-1/4 cups flour
1 teaspoon baking soda
2 teaspoons baking powder
pinch of salt
3 ripe bananas mashed
Cream Cheese Frosting:
½ cup (1 stick) unsalted butter softened
8 oz cream cheese softened (brick-style, not spreadable)
1 teaspoon vanilla extract
¼ teaspoon salt
4 cups powdered sugar
Instructions
Preheat oven to 375°F.
Add lemon juice to bottom of measuring cup. Add enough milk* to make ¼ cup (of lemon juice and milk) and set aside.
Beat egg whites on high until stiff peaks form and set aside.
In a separate bowl, cream together butter and sugar with mixer.
Add in yolks and milk mixture.
Mix together flour, baking powder, baking soda & salt. Slowly add to butter mixture.
Stir in bananas. Then gently fold in egg white mixture.
Pour muffin mixture into lined (or greased) muffin tin.
Bake for 17-20 min or until cupcakes spring back when lightly touched.
