Apple Upside Down Cake

Description

This apple upside down cake is perfect for mornings, pot lucks, brunches or desserts. Delicious apples with a sweet sticky glaze and the perfect blend of spices over a buttery cake with a hint of mace. Mace is the perfect spice in this cake.

Topping:
3 large or 4 medium sized McIntosh apples
5 Tbsp butter
1/2 cup brown sugar
2 tsp ground cinnamon
1/2 tsp nutmeg

Cake:
11/4 c. sifted unbleached all-purpose flour
2/3 c. granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ground mace
1/3 c. (2/3 stick) butter, softened
1/2 c. milk
1 tsp. vanilla extract
1 egg


Instructions

Preheat oven to 350 degrees F. Butter a 9-inch round or square cake pan. Peel apples and sprinkle lemon juice over them. Cut them into wedges, remove the core and slice.

Melt the butter in a saucepan. Add the brown sugar, cinnamon and nutmeg and cook until sugar dissolves. Pour the mixture in the prepared cake pan and arrange the apple slices in a decorative pattern on top of the butter/sugar mixture. Cook the apples in the oven until you prepare the batter for the cake.

While the apples are in the oven, prepare the cake batter.

Into a mixer bowl, resift the flour, sugar, baking powder, salt & mace. Add the softened butter, milk & vanilla. Beat on low speed for 1-1/2 minutes, then add the egg and beat 1-1/2 minutes longer. Spread the batter evenly over the apple mixture with a rubber spatula – the batter is quite thick. Bake for 35 to 40 minutes, or until a toothpick inserted into the middle of the cake comes out clean. Remove from oven, loosen edges with knife, and invert immediately onto platter. Let cool before serving.
