Soft Spice Biscotti

Description

Delicious soft spice biscotti with nuts and raisins. Softer than the traditional biscotti. The perfect Italian cookie.


Ingredients

Scale

1 cup granulated sugar
1 cup brown sugar
1/2 cup chopped almonds or walnuts
1/2 cup raisins
1/3 cup oil
2 tsp. cinnamon
1 tsp. ground cloves
2 tsp. water
3 large eggs
2-1/2 cups all purpose flour
2 tsp. baking powder


Instructions

Preheat oven to 350 degrees F.

Combine first 9 ingredients.

Beat with a hand or stand mixer at low speed approx. 1 minute.

Combine flour and baking powder. Gradually add flour mixture to mixture in bowl, beating until blended.

Turn dough out onto a lightly floured surface, shape into three 6″ x 4″ rectangles.

Place rectangles onto baking sheet coated with cooking spray or a parchment sheet. Flatten to 3/4′ thickness.

Bake at 350 degrees F for 25 minutes.

Remove and cool for 10 minutes. Cut diagonally into 3/4 inch slices.

Notes

Original recipe called for a baking temperature of 375 degrees F. I thought they came out too browned on the bottom, so I would suggest baking at 350 degrees F.

If you would like the traditional biscotti, after slicing put back in the oven and bake at 350 degrees F for 10 minutes. Flip cookies over and cook for another 10 minutes.
