Description
Delicate, shortbread like cookies, with a hint of cinnamon and walnuts, rolled in confectioners sugar.
Ingredients
1 cup unsalted butter, room temperature
1–1/4 cups confectioners sugar
1 tsp. vanilla extract
1/4 tsp. salt
1–3/4 cups all purpose flour
1 tsp cinnamon
1 cup ground almonds or walnuts
Instructions
Preheat oven to 350 degrees F.
Ina stand mixer, cream the butter until fluffy.
Add 1/2 cup confectioners sugar and beat until light and fluffy.
Add the vanilla and salt and beat until blended.
Sift flour and cinnamon together.
Add flour mixture to butter mixture and mix on low speed.
Stir in nuts.
Cover and refrigerate until dough is chilled (about 15 minutes).
Shape dough into 1″ balls and place on greased cookie sheet.
Bake until just golden about 10 to 12 minutes.
Transfer to cooling rack.
When completely cool, roll in remaining confectioners sugar.
Notes
I use a spring type ice cream scoop about an inch wide to help with getting the same size cookies.
If you are making these in the warmer weather, wait until you are serving to roll in the confectioners sugar. The humidity can make the sugar gummy.
