Apple Crumb Squares

  • For the Dough:
  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, cold
  • 1 egg
  • For the Filling:
  • 5 cups sliced & peeled apples
  • 2 tablespoons lemon juice
  • ½ cup all-purpose flour
  • 1 cup granulated sugar
  • ¼ teaspoon salt
  • 1/2 teaspoon apple pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 375 degrees F. Grease a 9×13-inch baking dish.
  2. For the Dough: In the bowl of a food processor, process together the flour, sugar, baking powder and salt. Add cold butter, and process until well blended (you shouldn’t be able to see any large chunks of butter). Then add egg to the flour mixture, and process until dough starts to want to form together. You’ll notice a change in the sound of the processor. The dough will be crumbly.
  3. Pat half of the dough into the prepared pan. Place the pan and the remainder of the dough in the refrigerator while you prepare the filling.
  4. For the Filling: Place the sliced apples in a large bowl and sprinkle with lemon juice. Mix gently. In a separate bowl whisk together the flour, sugar, salt, cinnamon, apple pie spice and nutmeg. Pour over the apples and mix gently.
  5. Spread the apple mixture evenly over the crust. Crumble the remaining dough over the apple layer.
  6. Bake in the preheated oven for 50 minutes, or until the top is slightly brown. Cool completely before cutting into squares.
