Beef Noodle Bowl

Description

These noodles are super tasty and perfect for a weeknight meal, side dish, or for lunch the next day.


Ingredients

3 Tbsp vegetable or canola oil
2 garlic cloves, minced
1 small onion, sliced very thin
1 pound coarsely ground beef or small chicken pieces
2 carrots, peeled and cut into slivers
1 red bell pepper , sliced thinly
6 green onions, cut into diagonal slices
1 lb fresh lo mein noodles
1/4 cup water (if needed)
3/4 cup Stir Fry sauce


Instructions

Heat your wok or saute pan on high. Add oil. Stir fry the onions and garlic.

Add marinated beef and cook about 2 minutes. 

Add carrot and red bell peppers. Saute about 2 minutes.

Add cooked noodles and sauce. You can also add about 1/4 cup water if you like the sauce thinner. Mix together until fully coated.

Add scallions and toss.

Top with additional scallions when serving.

Notes

If fresh noodles are not available, you can use dried. Just cook according to package directions. Other vegetables such as broccolini, mushrooms etc may also be added or replaced for one of the vegetables listed.
